Alice (Milla Jovovich) uses two of these throughout the movie.

Seen used by Alice when she tried to get supplies from a gas station. For some odd reason, they made the red-dot sight one the thing magnify.
SA-80/L85A1
Chase (Linden Ashby) uses this weapon perched up on the "Eiffel Tower" in Las Vegas.
Cobray M11/9
Carlos (Oded Fehr) uses this for the upgraded zombie fight in Las Vegas before running out of ammo and discarding it. It had an attachment under the barrel to set your hand on and a retractable buttstock, which made the previous guy who posted and myself think it was an MP7.
Taurus PT92AFS
Mikey (Christopher Egan) uses one of these in the Vegas zombie fight and before during "The Birds" scene. Captain Slater (Matthew Marsden) also uses one to shoot Dr. Isaacs (Iain Glen).
Glock 17
Claire (Ali Larter) uses this in the Vegas zombie fight. An Umbrella soldier also has one in his ankle holster, which he tries to shoot Alice with.
Desert Eagle
LJ (Mike Epps) uses this Gold plated weapon on several occasions. Strangely, he had two in Resident Evil: Apocalypse, yet only has one in Extinction. It is possible he lost one in the 5 years that passed between the movies.
- Note: Didn't he give the other to Betty? I'm pretty sure she uses it before she gets killed.
IMI Uzi
On the movie poster Alice uses two of these.
Mini Uzi
It is also used by a suvivor in the battle with the test subject zombies in Vegas.
Mossberg 500 "Compact Cruiser"
Alice uses this in the Las vegas scene when fighting off the super zombies. The weapon first appears about 8 and a half minutes into this film strapped to Alice's back in a cut-off commercial camo case as she pulls up to the TV station KLKB. Possible images of prop of weapon shown [here][1].
Winchester 1894
Claire Redfield (Ali Larter) uses one of these to try and kill a zombie on top of Mikey. The sound effect doesn't follow every time Claire cocks the weapon. It seems like for every 2 shots, we see her cock once, but when she first it off screen, we don't hear her cock again for the next shot before we see her cock again
H&K USP
Carlos has 2 of these, with stainless steel slides. He loses one of them under the bus. In the next shot when we see him crawling under the bus, his remaining USP apparently was switched with a Taurus like weapon
Beretta 92F
A tu-tone Beretta, or it could be a Taurus was seen replacing Carlos's USP immedietely in the next shot. A regular one was seen in the hands of Slater.
Beretta Cx4 Storm
Seen held by one of the Umbrella guards before Alice shot him down.
